Half the fun of opening a restaurant is coming up with a name. If you ask Bobby Coyote, owner and operator of the two Dos Coyotes Border Café restaurants in Davis, he'll tell you that it can also be the hardest part of the job. It's important to come up with something unique but manageable, interesting but easy enough to say and think of when you're hungry. When he was still working on the ideas for the menu, Bobby drove down to San Diego to work with a chef and to get ideas. The drive back to Los Angeles was a time for dreaming. With the menu shaping up and the concept coming to life, it was time to start thinking about what to call the venture. Bobby describes this brainstorming session as a little erratic, and isn't inclined to mention some of the names he went through. Now, nearly 20 years and seven locations later, the bad ideas are forgotten while the good one lives on, naming the unique concept that has become synonymous with Dos Coyotes.
Bobby has been working in restaurants for most of his life. "My first job was scooping ice-cream at 31 flavors," he remembers with a smile. Bobby credits his experiences working at the Café Figaro in his hometown of Los Angeles with his restaurant education.
