Japanese batter, French maid outfits, and urban hip are wrapped together at the new Crepe House Uni restaurant on 117 E Street. This recent addition to downtown Davis is the first U.S. branch for the Crepe House Uni Corporation, a 42-year-old Japanese restaurant chain with locations in Japan, China, Singapore and The Philippines.

Twenty-seven-year-old Sagat Cheung, CEO, sampled 63 types of Japanese crepes before signing a contract with Crepe House Uni for the franchise rights for the state of California. The point of this taste-testing mission? "I wanted to search out the best-tasting crepe in Japan to bring to the U.S.," says Sagat.

Crepes are typically associated with berets and baguettes, not sushi and kimonos. So what is a Japanese crepe? "The crepes I’ve tried in the U.S. are salty, crispy and served on a plate. Japanese crepes are different - they’re spongy and sweet, almost cake-like," explains Sagat. Crepe House Uni customers are handed their crepe in a conical paper wrapper, making for an easy to-go treat. The batter is imported from Japan to ensure the authentic Japanese taste and texture. "The crepe mix has over 50 different ingredients. It’s a secret recipe. I think less than 10 people know what’s in it," says Sagat.
