Peach Popsicles

This is more of a suggestion than a recipe. I think you’ll probably have the same response I did: Why don’t I do this more often?

Popsicles are easy to make, and the varieties are endless. Use whatever fruit you have on hand, blended with a little juice and/or yogurt. And you don’t even need popsicle molds – leftover single-size yogurt containers work just as well. I used the combination below, and I think next time I’ll add even more peaches.

  • 3 large peaches, peeled and cut into large chunks
  • 1/8 cup orange juice
  • 1/2 cup of low fat vanilla yogurt
  • popsicle molds (of some kind) and sticks

Blend the peaches, juice and yogurt until smooth. Pour into popsicle molds, and freeze for about 3-4 hours.

makes about six pops
